Please bear in mind that electric sharpeners, although effective and quick to use, do grind your knives away quite quickly.
Lastly once you have beautifully sharp knives, do not put them in the dishwasher, as the coarse washing abrasion blunts them. After use, get into the habit of rinsing and drying your knife and placing it in a safe place. Although it's common sense, never leave your knives in a bowl of washing up water, where they may go unnoticed, you or someone else may go to into the bowl to grab something to wash and could catch the blade, and your knives will now be razor sharp.

CNBC got an inside look at United Airlines Flight Training Center in Denver. At nearly half a million square feet, this facility is one of the largest airline training hubs in the world. All of United's 12,000 pilots come through here for initial training and return every 9 months to stay up to date on flight procedures and safety protocols.
The campus has 31 simulators, each costing $15 million to $20 million. And United plans to have a total of 40 in the next 12 to 18 months. Pilots must complete training in the simulators before flying in real planes.

Yuji Haraguchi is a butcher and owner of the fish market Osakana. In this episode of Handcrafted, Haraguchi shows Bon Appétit how to butcher a whole tuna and explains every cut of fish you would see at sushi restaurants. To do this, Haraguchi uses five knives: the Yanagi, which is used for slicing sashimi, the Mioroshi Deba filleting knife with narrow thin blade, the Deba single-edged knife used for breaking down the whole fish, the Gyuto versatile multipurpose chef's knife, and the Yo-Deba. He breaks down the tuna into back loin, belly loin, pelvic fins, bones, and collars. From there, the cuts are broken down into saku blocks and sashimi like toro, chu-toro, sinews, sankaku, akami, tuna tartare, and aburi.

Chuck short ribs are prepared from the forequarter and comprise the rib bone, intercostal meat and a layer of of chuck (H.A.M. 2260) meat and fat. The number ribs required and the length is determined by the dish being prepared. There are numerous ways to butcher ribs also determined by the style of dish being prepared. Chuck short ribs are rich in flavour and if prepared properly, very tender. Ribs should be simmered for 1 hour before they are pan fried or grilled to ensure the meat is succulent and connective tissue is broken down.

There are only 29 dairies in the world certified to produce this cheese. We visited Caseificio Si Invernizzi in Trecate, Piedmont, Italy, where between 450 and 500 Gorgonzola wheels are made every day.

This 1946 vocational guidance film does an excellent job of surveying the baking industry as it sat in the 40’s. It shows the various steps and methods in bread making, and discusses how one trains for these jobs, and the difference between a large commercial bakery, and a small mom & pop bakery (which are rather rare anymore). The film includes footage of the full process of baking bread at the Schulze Baking Company Plant (Interstate Bakeries Corporation) in Chicago, Illinois.
These 'Your Life's Work' films are pretty funny, as they present 'qualifications' to what is needed to be a baker, which of course involves physics, chemistry and mathematics. A wide variety of bakery jobs are shown and described specifically here, like the pan loader. "The pan loader loads the dough into the pan".

Commercial bread commonly contains additives to improve flavor, texture, color, shelf life, and ease of manufacturing.

It is eaten as a snack, and used as an ingredient in other culinary preparations, such as sandwiches, and fried items coated in bread crumbs to prevent sticking. World War 2 directly affected bread industries in the UK ant the US. Baking schools closed during this time so when the war did eventually end there was an absence of skilled bakers. This resulted in new methods being developed to satisfy the world’s desire for bread. Methods like: adding chemicals to dough, premixes and specialized machinery. Unfortunately, these old methods of baking were almost completely eradicated when these new methods were introduced and became industrialized. The old methods were seen as unnecessary and financially unsound, during this period there were not many traditional bakeries left.
Sliced bread is a loaf of bread that has been sliced with a machine and packaged for convenience. It was first sold in 1928, advertised as "the greatest forward step in the baking industry since bread was wrapped". This led to the popular phrase "greatest thing since sliced bread". During 1943, U.S. officials imposed a short-lived ban on sliced bread as a wartime conservation measure.

In this episode of 'Price Points', Epicurious challenged meat expert Elias Cairo of Olympia Provisions to guess which one of two deli meats was more expensive. Cairo breaks down cuts of salami, ham, bologna, mortadella, hot dogs, sausages, and prosciutto. For each round of deli meats, Cairo visually scans, smells, and taste tests each meat before guessing which deli meat costs more. Once the prices were revealed, Cairo explains why a specific deli meat costs more and dives into specifics on what to look for in a deli meat.

....falling in love on the road, biking as a kamikaze, crossing the cold dry deserts, fishing, sailing, surfing, farming, trekking, volunteering on the reef, getting lost in a metropolitan jungle or in the depth of the rain forest. From freezing Alaska to the Australian desert and everything in between... The ten winning stories in our opinion are all fantastic and make it clear that it was difficult to pick only 3 of them.
The criteria we used includes creativity, originality, quality of writing, photography, ability to engage an audience (number of supporters) and most important the talent to inspire other to conserve nature and promote intercultural understanding.
Our judging panel met up at the World Travel Market (WTM) trade show London and remotely to assess your stories and finally we are glad to announce the three winners:

The "soft" definition of sports tourism is when the tourist travels to participate in recreational sporting, or signing up for leisure interests. Hiking, Skiing and Canoeing can be described as soft sports tourism. Perhaps the most common form of soft sports tourism involves golf in regards to destinations in Europe and the United States. A large number of people are interested in playing some of the world's greatest and highest ranked courses, and take great pride in checking those destinations off of their list of places to visit.

This idea of pairing quality sports events with the Bahamas attractions, raised the islands’ profile and brought in more visitors and dollars to the country. The Battle for Atlantis brought more than 5,000 fans in during Thanksgiving week for the three-day tournament. The last few months I have spent many hours on my computer visiting many websites of Independent Hotels and Bed & Breakfasts. The purpose was to see what sites were working and which were not.
During this research, I was surprised with something I noticed. How many hospitality properties do not have a social media presence and I don’t just mean on their website but no Twitter, Facebook or YouTube accounts at all.
I was also surprised to see how many hospitality properties do not have a way to collect email addresses on their websites or were mobile phone friendly.
I have asked a couple of hospitality property owners about this and was given a number of reasons such as, “I don’t know how they work”, “ I don’t have the time to spend online”, and one actually said “If people what to stay here, they can find me”.
If the sale of room nights is not a problem, than there is no reason to worry about social media but if you want to improve your sales and increase return business, then social media is crucial.
The will be extra work but as I said in an earlier post “short term pain for long-term gain”.

Many people will check out booking engines on the internet before booking a hotel and then visit the properties website for more information.
Annual online travel sales have increased from $93.8 billion in 2007 to $162.4 billion in 2012.
Number of travel bookings made on the internet each year 148.3 million
Percent of all travel reservations made on the internet 57 %
Percent of same day hotel reservations made from a smartphone 65 %
Facebook has some 1.11 billion monthly active users, as of March 2013. The number is up 23 % from last year.
Facebook has 751 million users checking the social network from their mobiles, as of March 2013. The number of users have increased 54%, from one year earlier.
Currently, on an average, people like 4.5 billion items daily on Facebook, up 67% from August last year.
People are sharing more and more on Facebook. On an average, some 4.75 billion pieces of content are shared daily on the social network, up 94% from 2.45 billion in August 2012.
There were 8 million local business pages on Facebook in June 2012. Fast forward a year, and the number is 16 million currently; a 100% jump.
Twitter has 500 million users with 200 million active
Over 460k new accounts created every day, 177 million tweets sent per day, + 182% in mobile Twitter users in the past year.
And then there is YouTube.
Some of you might be saying, YouTube, I don’t have a cute kitten, why would I use YouTube?
YouTube is the second largest search engine on the internet with 1 billion users and 4 billion uses per day

The first thing we should do is explain the difference between the Pinterest and Instagram platforms?
They are visual-sharing social networking sites where you can upload photos and images for other people to see. The main distinction lies in the fact that people use them differently.
Instagram is about sharing your own photos, Pinterest is about curation.

Create a Successful Blog for Your Property, build trust with your audience, and increase your customer base & profit.
Today we are going to talk about how to create a successful blog and spend a couple minutes explaining a few things for you to get started and share with you some of the initial mistakes bloggers make.
You have to decide the reason you want to write a blog.
Take a moment to ask yourself these questions:
• Why is your property blog worthy?
• What story supports this property?
• Who would share your passion?
• Are your employees aligned with this passion?
After you have answered these, start brainstorming:
Who are your target guests?
Once you know who your ideal customer is, do a little research into their behaviour and then you can adapt your blog accordingly.
Some places you can start this type of research include:
• Q & A forums ie. Quora, & Yahoo! Answers
• Social media ie. Groups of social media sites
• Tools for getting content for your potential customers ie. BuzzSumo.com & Topsy.com
• Blog comments on other blogs your potential customers might read. What type of content are they already engaging with on other blogs?
Your Competition
Compile a list of 5-10 of your closest or the same type of competitors with blogs, audit their content and see what is working.
Targeting Keywords
Create a list of 5-10 keyword groups you want to rank for and with them the associated long-tail keywords you can include in blog content.

Which social media platforms are the best for my hotel business?
In our last podcast I put out a call to find out what you would be interested in hearing more about.
I had mentioned that, Keystone HDC has produced 34 hospitality property podcasts with information, tips, and hopefully lots of food for thought for you but these were themes based on problems we had seen in different hospitality properties.
The call out in the last podcast was to give you a chance to ask specifics questions and something that came out loud and clear is that more time should be spend on marketing; specifically, social media.
In episode #8 I talked a little about social media and gave statistics on couple of different platforms. I had also mentioned in the past how we as customers in our everyday lives, rely more and more on our computers and smartphones to gather information.
I firmly believe that a hospitality property having a social media presence should not be something to consider down the road but is a must in your current marketing plan.
So I know some of you might be thinking “I have no idea where to start.”
I thought we would take some time to look at the current major platforms available.
Facebook
Facebook is the most common among all the social media marketing tools and through Facebook Advertising you can be very specific on who you target with your marketing.
But don’t think that throwing money Facebook Advertising is all you have to do. This is a platform where you have to build trust. People aren't going to automatically trust you when all they see is advertising and promotions coming from you. You need to build that trust by doing things like sharing valuable content, news about your property, and information about what is going on in your region. By developing a rapport, people will begin to see you as an expert in your field, on your region and in the hospitality industry and then will be more interested in spending money with you.
Twitter
Twitter is quick, frequent and tends to have an intelligent audience ready to make quick decisions. With over 645 million registered users, twitter is a sea of information waiting to be read, followed, and re-tweeted which is great for grabbing people's attention quickly, driving more people to your web page.
While it's a great way to share quick thoughts and generate traffic to your website and offers, building relationships with followers is nearly impossible to do. With Twitter people will follow you because they like what you have to say.
LinkedIn
LinkedIn is definitely different from the rest of the social media outlets out there when it comes to business. Instead of just connecting with individuals themselves such as clients or customers, you can connect with other business as a whole. This can be very beneficial if you wish to target business clientele.
There is not much in the way of conversation on LinkedIn as on other social media marketing sites, but you do have the ability to join groups or communities where you can ask questions and engage in conversations.
Those are the 3 platforms we will look at today, next week we will check out YouTube, Pinterest, instagram and Google +.

I’m your host Gerry MacPherson and today we are going to talk about creating an effective website
In this age of the Internet and social media, having a website is essential to developing your properties brand. It's fine to present your business in the flesh and traditional media, but if you don't at least have a website, you'll be seen as old-fashioned and unapproachable.
The look of your website will influence guests on the type of property you are. If your website looks dull and boring, potential guests will think your property is dull and boring; if your website is vibrant and fun, guests will think your property is vibrant and fun.
Let’s start with your domain name.
Your domain name should be your website name. Now, this might seem obvious to some of you, but you would be surprised at how many hospitality properties I have seen that has a domain name that is not the same or does not reflect the name of their property.
When marketing your property, the first thing you want is people to think of your properties name and almost 100% of the time when searching your property online people will use that name.
What are better long or short domain names?
Domain names should never be longer than 67 characters and I would include spaces in that length.
Choosing your web host
When choosing a web host you have many options. Companies such as hostgator.com or godaddy.com are popular and full service but it is worth the time to ask and shop around for the host that will best serve your needs.
There is free web host out there but most have advertising that could take away from your site's design or contain hidden text on its pages without your knowledge. This could lead to your website being penalised by the search engines through no fault of your own. I would stay clear of free sites.
Once you have settled your domain name and web host, the next step is to design the website itself.
Your options include:
If your hands on or have an employee that is comfortable with program coding you can use a responsive web design program to build a site such as Adobe’s Dreamweaver or a free version called Kompzer.
Use WordPress. It is an open source website publishing platform with a wide variety of both free and fee themes that will meet almost everyone’s design wish.
Another option is to hire a professional website designer.
The first thing you should do is put your thoughts on paper, look at what other successful sites look like.

I’m your host Gerry MacPherson and in our last session talked about choosing your visual branding. Today, we are going to continue our discussion about choosing your visual branding.
In the last session, I had mentioned that there are four key components you should consider when you want to improve your visual branding for social media success.
The first two were,
• consistent colours
• fonts
In today’s session, I’ll talk about the next two components you need to consider. They are
• imagery
• layouts
Imagery
When using images make sure you stick to a consistent theme and by that, I mean the same type of look. You don’t want some images blurry for effect and then others with a red tinge. Some companies might use fuzzy edges all are images or a sun filter to give their pictures a summery feel. I’m not going to say one is better than the other, but whatever you choose, stay with it. Even if you’re using your own photos, stay consistent with your theme.
I do highly encourage you to use images of your property as often as possible, but I understand that it might not be possible every time you post. If you’re going to mention attractions or things to see in your region, use those images.
If you’re going to be customising or working on your own images, the program we use is Adobe’s Photoshop. This course is perfect if you want to turn your images into a professional photographer quality.

So what do we have to do?

The material could vary a little bit from property to property but the frame or structure I’m going to share with you is universal.

“Statistically 9 out of every 10 businesses fail within the first five years.
75% or more of franchises succeed. “
This is why you should not look at your property, as an independent business but as a franchise.
A major component of every successful franchise is their operations manual.
If you’re a small independent hotel, Inn, Bed & Breakfast, or resort the chances of you succeeding increase dramatically if you take the time to develop an operations manual.
As I mentioned in the last video, your Operations Manual should be treated it like a living, breathing entity and can be amended accordingly as trial and error findings are made. When designing this Manual, you must always have in the back your mind,
“Can I open a second location with his Manual model and not have any problems?”
or
“Can I open 10 locations that this Manual model and not have any problems?”
or
“Can I open 1000 locations that are the Manual model and not have any problems?”
Your goal must be to develop the best working system of the model and when it’s complete your system must work like clockwork.

Step 1: Use titles
Use the titles of your Indian counterparts, or address them as "Mr.," "Mrs.," or "Miss." Exchange business cards at the beginning of a meeting, which is standard Indian business etiquette.
Tip
The western habit of whistling to get someone's attention is considered impolite in India. Winking may also be interpreted as offensive, and even sexual.
Step 2: Conduct with respect
Conduct yourself with respect that reassures Indian businesspeople that your intentions are trustworthy and sincere. This includes reining in the western tendency to be aggressive, which, in India, can be taken for disrespect.
Step 3: Give gifts attention
Decline expensive gifts if you can. When you can't, accept the gift with both hands. Set aside a wrapped gift until the giver leaves, which is considered proper etiquette.
Tip
Avoid motioning to someone with a palm up or by wagging one finger, which is an insult. Standing with your hands on your hips is also considered an aggressive posture.
Step 4: Be sensitive to culture
Accept all food and drink during business meetings, even if you elect only to nibble at it.
Step 5: Know what they eat
Remember that Hindus don't eat beef, and Muslims don't eat pork. Many Indians are entirely vegetarian. Be sensitive to a predominant cultural and religious inclination toward vegetarianism and a general abstention from alcohol or cigarettes. Indians prefer business lunches to business dinners, by and large.

Go along with a general disregard for punctuality. Relax and be flexible with them and business will go swimmingly.

First of all, your table manners speak volumes about your refinement and it's often interpreted as a sign of character. It's not at all about being snobby or showing off but much rather show respect, your host and your dining partners will greatly appreciate your manners.
It's very important to keep in mind, proper table manners aways help you and never hurt you. The good thing is they can be learned and its never too late to do so.
So what are table manners?
02:31 I suggest you turn your cell phone ringer off when you enter someone else's home and put your phone in your pocket when you're with the guests. Don't leave your phone on the table because you are much more likely to pick it up and look at it which is impolite In the presence of other people.
02:46 If the table is all set, you don't just walk in and sit down. Wait to be seated or wait for the queue of the host, or if they sit, you can sit as well.
02:56 Ideally, want to sit up straight but comfortably, don't slouch, or cross your arms, or sit as you would on your couch while watching a football game.

If dessert will be served, you'll find either a little fork or a spoon on the top side of the plate. If soup is served or anything else that requires a spoon, you will also have a spoon. On the top right of the plate, you'll likely find a water glass which is always filled and a wine glass which is empty, to begin with. Sometimes you also find beer glasses; if you prefer that, if that's what's served with a meal. If you see little plate with an extra knife on a top left to your plate, that's for bread and butter. When you're done with the course, you place the fork and a knife at a four to five o'clock angle that means you're done.
05:26 Three, now it's time to serve the food. Most informal dinners are family-style meaning there are bowls or platters where food is served from. For formal dinners, courses are usually plated but we talk about the intricacies of that in our formal dining etiquette video here.
With bowls and anything at the table, the cardinal rule is, don't reach over anybody else and don't touch them. To start, pass the bowl around the table from the left to the right when you get the bowl you hold it and you serve yourself then you pass it on to your neighbor on the right. Always use the serving utensils and never your silverware that's on your place setting. Of course, if the host or hostess has a different idea, go with what they do.
06:57 Four, finally it's time to eat. You should only start eating when everyone else has been served and a host or hostess starts to take their fork and take the lead. It is very impolite and sometimes even rude to just dig into your plate of food while the others are still empty-handed.

02:46 If the table is all set, you don't just walk in and sit down. Wait to be seated or wait for the queue of the host, or if they sit, you can sit as well.

On the top right of the plate, you'll likely find a water glass which is always filled and a wine glass which is empty, to begin with. Sometimes you also find beer glasses; if you prefer that, if that's what's served with a meal. If you see little plate with an extra knife on a top left to your plate, that's for bread and butter. When you're done with the course, you place the fork and a knife at a four to five o'clock angle that means you're done.

With bowls and anything at the table, the cardinal rule is, don't reach over anybody else and don't touch them. To start, pass the bowl around the table from the left to the right when you get the bowl you hold it and you serve yourself then you pass it on to your neighbor on the right. Always use the serving utensils and never your silverware that's on your place setting. Of course, if the host or hostess has a different idea, go with what they do.
06:57 Four, finally it's time to eat. You should only start eating when everyone else has been served and a host or hostess starts to take their fork and take the lead. It is very impolite and sometimes even rude to just dig into your plate of food while the others are still empty-handed.

The best hotels offer guests unique local experiences, says jury members for the AHEAD Asia hospitality awards, in this movie produced by Dezeen.
Now in their second year, the AHEAD Asia 2018 awards were presented in a ceremony at the Andaz hotel in Singapore earlier this month, celebrating the best in hospitality design from across the continent.
In this movie, which Dezeen filmed in Singapore for AHEAD, the judges claim that design was just one of the things they were looking out for when assessing the submitted entries.
"More and more of what we do is not about the things that go in the space," says Wimberly Interiors director Christine McGinnis in the film.
"It's really about how it makes people feel and part of that is the notion of the local context. People are looking to take something away from their stay or their experience. They want to learn something."

Whether we were playing drums at an indian wedding or were exploring places like Jaipur, Pushkar, Varanasi, Jodhpur, New Delhi or Rishikesh - we always had our cameras with us to capture the incredible stories that appeared to just happen on the street every single day.
India has definitely been a tough country to travel but nevertheless it was worth the visit.
We learned a lot while this journey and our footage now finally resulted in this beautiful travel video about north India!
Whether we were playing drums at an indian wedding or were exploring places like Jaipur, Pushkar, Varanasi, Jodhpur, New Delhi or Rishikesh - we always had our cameras with us to capture the incredible stories that appeared to just happen on the street every single day.
